Conference Dining for Celiacs

I just spent four days at the ThrillerFest conference at the Grand Hyatt in New York. If you’re a fan of mysteries, crime novels, or thrillers — or if you aspire to write them — you may have heard of it. Best-selling writers such as Lee Child, Steve Martini, Lisa Gardner, David Baldacci and Meg Gardiner all spoke at the event (along with many others). It was a fascinating scene.

And yet, what I was really thinking about was lunch.

When I registered for the conference a couple of months ago, there was a place on the online form to add any special notes. I mentioned that I have celiac disease, and that I would need a gluten-free meal for the luncheon on Thursday (other meals weren’t included in the conference, so this was the only one I needed to arrange in advance). I didn’t really expect to hear anything back from the organizers, so 10 days before the conference, I e-mailed them. I told them what I needed, and asked them how I would go about arranging it. They responded promptly and assured me that they would look into it. And so I waited… and waited.

After a couple of reminder e-mails, I got a message from one of the organizers. This is what it said:

I never got an answer back on my question about this. What we have done in past years for the banquet is that you tell your waiter your special requirements when you are seated. If I learn something different, I’ll let you know.

At this, alarm bells went off for me. While a restaurant can come up with a gluten-free meal with no notice, it’s tougher at a catered event. My worst experience on this front was at a conference I attended in Chicago five years ago, just after I was diagnosed with celiac disease. I’d told the organizer what I could and couldn’t have, and she told me I’d be fine. Then, at dinner the first night, I discovered that our meal consisted mainly of pizza. When I cornered the organizer, she was indifferent. “You can eat the toppings on the pizza,” she told me. “You don’t have to eat the crust.”

That was an eye-opener for me. And however ill-informed that conference organizer was, she forced me to realize that even when you explain to someone else what celiac disease is and what you need to avoid, they may not take it as seriously as you do. It was an important lesson.

In the end, my luncheon problem was easily solved, because I got in touch with the catering staff at the Hyatt directly. As with every Hyatt property I’ve visited — from Toronto, Canada to Santiago, Chile — they assured me that it would be no problem to get a gluten-free meal ready for me. And they meant it: I was served a main course of chicken with steamed broccoli and carrots. (Several people I’ve interviewed, including Alice Bast and Vanessa Maltin, have mentioned how helpful and accommodating Hyatt is on the gluten-free front.) But it reminded me that sometimes you really do have to take matters into your own hands.

Luxurious Gluten-Free Dining for Less

One of my favorite things about my job is that I get to discover and review wonderful places. I was just up in Toronto for my annual Frommer’s guidebook, and I’m happy to report that I found plenty of things worth writing about (including the amazing Frank Gehry renovation of the Art Gallery of Ontario — the photo above is of his spiraling showpiece of a staircase). Given the state of the economy, I focused on finding places that are particularly good value for the money. One of the things that’s bothered me over the past few years is that the prices at some restaurants have veered off into the stratosphere; last year, it seemed like many of the new spots that opened were charging upwards of $40 for an entrée. You could argue whether that’s a good idea at any time, but in a recession it just seems wrong.

That’s one of the reasons why I was so happy to discover Madeline’s. Toronto has plenty of famous chefs, but one of the most celebrated is Susur Lee. He closed his flagship Toronto restaurant, Susur, when he moved to New York to open a new restaurant in the Thompson Hotel. However, he promised that he’d replace it with another spot, and Madeline’s is the result. Named for the chef’s mother, it’s a breathtakingly beautiful spot, with a glamorous dining room decorated in a mix of Moroccan, French and Byzantine styles. But the shocker was the menu: almost every entrée is under $20. Coming from one of the most renowned chefs in the city, that’s something unusual. Especially since there doesn’t seem to be any trade-off with the quality of the food (incredible) or the service (outstanding). Why aren’t more chefs doing this? (I should note that the fabulous Jamie Kennedy, another Toronto star chef, has been offering excellent tapas plates at very reasonable prices for some time now; I reviewed the Jamie Kennedy Wine Bar last year.)

There were a few things I couldn’t have on Madeline’s menu, but the staff was savvy about celiac disease and the gluten-free diet, and had no problem pointing out what would be safe for me. I ended up starting with a portobello mushroom salad that was dressed up with sweet onions, capers, and a poppy vinaigrette. For the main course, I had bison carpaccio with potatoes, chives, garlic, and Parmigiano-Reggiano. I passed up dessert (not many gluten-free options there), but went home satisfied — and excited about spreading the word. It’s still an indulgence, but one that felt well worth it.

Roundup: Gluten-Free Advice From Readers

I was thrilled by the response to last week’s post, “Gluten-Free Fast Food at the Eaton Centre.” Thanks to everyone who took the time to e-mail me or to comment. Many readers passed along their own suggestions of where to find gluten-free meals, and I wanted to share those ideas with you.

One reader, Chelsea, e-mailed me about some Toronto spots that she likes:

Have you checked out Fressen in Toronto? It is a very trendy vegan restaurant that also has a lot of wheat-free options (not fast-food but perhaps you would want to try it, if you haven’t already!). I also like Rice Bar in Kensington Market (also not fast food, but fairly cheap/fast). Also, there is a new wheat-free (and I think gluten-free) bakery on Yonge Street near Lawrence, called Organic Oven. So far I’ve only had a rice-made cupcake from there, but it was very good!

I’ve tried both Fressen and Rice and think they’re great, but I’d never heard of Organic Oven. It turns out that it’s a bakery that’s been operating for the past seven years in Brampton, and which has just opened a completely gluten-free bakery and café on Yonge Street, just north of Lawrence. Organic Oven uses certified organic ingredients, and also produces treats that are vegan, dairy-free, eggless, flourless, low-glycemic and/or diabetic-friendly. I’m looking forward to visiting it the next time I’m in Toronto.

Another reader, Marilyn, shared a couple of spots:

We’ve eaten gluten-free often @ the Salad King just north of the Eaton Centre on the east side of Yonge. It’s very informal & busy but good, cheap, cheerful & we’ve found the servers to be GF-aware… also we’ve stopped for pizza with the GF crust at the Pizza Pizza at 346 Yonge St — though it takes at least 20 minutes for the special order crust.

I’m fond of Pizza Pizza’s gluten-free offerings (which I’ve written about; I should remind everyone that many of their toppings are gluten-free, but not all of them are). I haven’t tried Salad King, so I’ve added it to my list of places to visit next time.

Another reader, Tom, told me about Portions, a company based in Guelph, Ontario, that is apparently the place to get gluten-free baked goods. Portions’ website lists its GF bread-baking schedule, which includes Cinnamon Raisin Loaf and Caraway Pumpernickel Loaf. I don’t know when I’ll next be in Guelph, but now I have a reason to visit soon.

Gluten-Free Fast Food at the Eaton Centre

Last week I met a fellow celiac who asked me what foods I missed the most since going on the gluten-free diet more than five years ago. I had to admit that there’s no one specific thing that I crave. As far as I’m concerned, the major food groups are comprised of chocolate, cheese, fresh fruit, and wine, and being diagnosed with celiac disease hasn’t stopped me from enjoying them (though it has limited my selection of chocolate, since some brands — such as Lindt — are made with malt). I’ve found gluten-free pizza, pasta, croissants, and even butter tarts. But there is one thing I miss, and that’s convenience.

Most people take for granted that if they’re out for hours — or stranded at an airport — they can find a quick meal somewhere. The gluten-intolerant don’t always have that luxury. Last week, when a business lunch in Toronto was cancelled at the last minute, I decided to explore the options. Since I was close to the Eaton Centre, Toronto’s famous shopping complex, I headed there. The news was better than I expected, and I found a few spots that could work for people with celiac disease as well as those with food allergies.

  • Freshii: The beauty of the construct-your-own-meal concept is that it’s usually easier to avoid the trouble spots. Freshii offers salads as well as rice bowls (made with brown rice) and rice-noodle bases, to which you can add fresh, unseasoned ingredients.
  • New York Fries: This Canadian chain serves up fries and only fries, so there’s no chance of cross-contamination in their fryers (an issue that can be a problem at some of the most famous fast-food chains). The fries are cooked in trans-fat-free sunflower oil. One catch: while the fries are gluten-free, some of the seasonings and sauces are not.
  • Chipotle Mexican Grill: Well-known in the U.S. for its gluten-free options, Chipotle is a relatively new player on the Toronto fast-food scene. There are several options for celiacs, and the chain is allergy-aware, too. Take a look at the company’s allergen information, a chart that shows which ingredients contain wheat, milk, eggs, fish, shellfish, peanuts, tree nuts, and soy, as well as gluten. Chipotle is located across the street from the Eaton Centre in Toronto Life Square ([address] 323 Yonge St., Toronto [tel] 416-596-8600).

On the Road With Alice Bast

Alice Bast is passionate about her mission to educate people about celiac disease. Diagnosed with the disorder in 1994, she founded the National Foundation for Celiac Awareness in 2003. As its executive director, she has worked with leaders in the medical, business, and media communities to raise awareness of the disease. She has also worked extensively with the public to get the word out. The NFCA is based in the Philadelphia area, but its best-known programs may be the Gluten-Free Cooking Sprees, which have taken place across the country and have introduced many to the joy of cooking without gluten. The latest NFCA initiative — training chefs at 28 Philadelphia-area restaurants in its Gluten-Free Resource Education Awareness Training (GREAT) program — has been another huge hit. Alice has also participated in strategic conferences and workshops shaping programs to advance celiac initiatives nationwide, including the landmark NIH Consensus Conference on Celiac Disease.

How often do you travel? I’m a serious road warrior — I’m in a couple of different cities each month.

Where have you traveled since being diagnosed with celiac disease? I’ve gone to so many cities around the country for Gluten-Free Cooking Sprees: San Francisco, Atlanta, Boston, Los Angeles — it’s a long list. I also travel to attend medical conferences; I was just in Chicago. Internationally, I’ve been to Australia, Amsterdam and Istanbul.

What foods or snacks do you pack when traveling? Travel can be really wearing, and I don’t like the idea of eating junk food to keep going. I think about health and nutrition when I’m packing. A gluten-free power bar goes right into my purse. I take crackers with me, and a nut mix with raisins — it’s basically trail mix. Also, I keep small gluten-free soy sauce packages with me as part of an “emergency” kit.

What other things do you bring with you? In my briefcase, which is always with me, I have my journal, iPhone, and computer. I take my vitamins with me. If you’re checking luggage, it’s important to have your essentials in your carry-on. I have what I call my “carry-on purse,” which is a big bag that has food, a toothbrush, and other essentials. I have an inflatable neck pillow for flights, and wherever I go, I have something to read.

How do you prepare for a trip? I always do research in advance to find out where I can go in a city. It’s important to be proactive. I look at the Gluten-Free Guidebook, and at the Triumph Dining guide and the Gluten-Free Passport. I’ll do Google searches. But I also challenge myself to find places that haven’t been written about. Sometimes I go to places that aren’t gluten-free to educate; that’s part of my personal mission, to educate and train wherever I go. I carry brochures in my purse. We have a program at the NFCA to train your favorite chef.

Any favorite restaurants? I can’t pick one restaurant in Philadelphia. The restaurants we’ve worked with are passionate about cooking gluten-free; they’re not just making an accommodation. When I go in they want to show off what they’ve learned and what they can do. It’s just amazing. I love Maggiano’s. I had dinner a couple of weeks ago at their Chicago restaurant. I was with a group and we told the chef to surprise us. He really went to town. Maggiano’s has embraced gluten-free, it’s like a challenge to do something really special.

Any favorite hotels? Hyatt has been incredible. They’ve hosted Gluten-Free Cooking Sprees. Their chefs are truly interested and have really worked with us.

What’s your favorite place to visit? My favorite business destination is San Francisco. I love going there. The food is amazing, and they’re really thinking about health and wellness. My favorite personal destination? It’s hard to pick one, but it would involve hiking. I loved hiking in New Mexico, and I’ve spent a lot of time hiking in the White Mountains.

What’s your dream destination? New Zealand. I’ve been to Australia but haven’t been to New Zealand yet. Also, I would love to visit Egypt.

Do you have any other advice for gluten-intolerant travelers? Make sure you know the words for “wheat” and “starch” before you travel. Always carry a cheat sheet in the local language. Whatever you do, don’t feel that you’re alone; find other people and ask for help. When you’re traveling, listen to your body. Sometimes people think they got “glutened” when they get sick on the road, but the problem was caused by other issues. You have to pay attention to what you’re putting in your mouth. Even if something is gluten-free, it’s not good for you if it’s junk food.

Planning for Gluten-Free Travel

On the weekend, I came up to Toronto on a research trip for a Frommer’s guidebook (I’m currently at work on Frommer’s Toronto 2010, my eleventh edition of that book). Visiting Toronto isn’t a stretch for me — it’s my hometown, and I know it has plenty of places that can serve up a good gluten-free meal. Unlike my trips to Peru or Turkey, I don’t need to stress about learning new words for “wheat” and “starch,” or packing enough celiac translation cards. Still, this seemed like a good time to talk about how to prepare for any trip you make.

  • Do some groundwork before you leave home: The good news is that it’s getting easier to find information. My long-time go-to sites, such as Celiac Handbook and Celiac Travel, have been joined by newer sites such as Gluten-Free Maps and the Gluten-Free Registry as reliable sources of information. Also, the National Foundation for Celiac Awareness and the Gluten Intolerance Group have great information for travelers to, or within, North America. Don’t overlook local blogs — these can be invaluable.
  • Think of your worst-case scenario… and plan for it: As someone who has had to resort to eating potato chips for dinner at midnight while waiting for a long-delayed flight, I want to warn you to be prepared. Wherever you’re going — even if you think it’s a short trip — pack a gluten-free protein bar… or two. They’re easy to carry, won’t cause problems with airport security (unlike, say, yogurt), and if you don’t need them, you can store them till your next trip. I’m particularly fond of the Organic Food Bar for Vegans. It contains 14 grams of protein, and among the gluten-free bars that I’ve tried, it stands out as the most delicious.
  • Never count on an airline to feed you: This is not to say that I’ve never had a good gluten-free meal on a plane. LAN comes to mind for doing a great job, as does British Airways. On the other hand, I’ve been promised gluten-free airplane meals that never materialized, and one time a flight attendant plopped a wheat roll on my dinner tray (in fairness to her, she was trying to be helpful and thought that I had been shortchanged on dinner). I’ve learned that it’s best to be pleasantly surprised by the appearance of a celiac-safe meal on a plane.
  • Celiac dining cards aren’t just for foreign travel: When I interviewed Beyond Rice Cakes author Vanessa Maltin a year ago, I was surprised that she used celiac cards when she dined at new restaurants. I swore by them for travel — especially when you don’t speak the language — but hadn’t tried the cards at home, or in an English-speaking destination. As it turns out, it’s a great idea: you don’t need to repeat your dietary restrictions to each member of the restaurant staff, and the card can be kept in the kitchen for reference purposes.
  • Keep the spirit of adventure: New experiences are good for mind, body, and spirit. Whenever we step outside of our comfort zones, we have the opportunity to learn something new — not only about the world, but about ourselves.

A Tale of Two (Gluten-Free) Tablas

It’s no secret that I’m a huge fan of Danny Meyer and his New York City restaurants. As one of the most prominent supporters of the Greenmarket in Union Square, the restaurateur has helped New York-area farmers, the locavore movement, and Manhattanites who want to enjoy fresh, sustainable produce. Meyer’s restaurants — including Gramercy Tavern, Union Square Café, Blue Smoke, and Eleven Madison Park — are delicious spots with well-trained staff who are happy to cater to diners with celiac disease or food allergies. Still, I have to confess that I was trepidatious about trying his Tabla Bread Bar. Let’s just say that sounded like an automatic no-go zone for anyone with celiac disease.

That’s not to say that I don’t like Tabla Restaurant, the Bread Bar’s glamorous sibling. I’ve had a few meals at Meyer’s Indian-inspired formal dining room, all intensely good and gluten-free. The dining room and the less formal Bread Bar are located in the corner of an historic bank building that overlooks Madison Square Park. The dining room is on the second story, while the Bread Bar operates on the first, and includes some al fresco seating.

If it hadn’t been for visiting friends from Vancouver, I never would have discovered that Tabla’s Bread Bar is as celiac-friendly as the formal restaurant. The two spaces are served by the same kitchen, where the staff is trained to avoid cross-contamination. The fact that the Bread Bar serves smaller plates — and is easier on the wallet — makes it an inviting find. At dinner, I had the incredibly tender Kerala Black Pepper Chicken (seared chicken stewed with curry leaves, onions, and black pepper), the Mung Bean Ussal (flavored with tamarind and coconut), and tandoori-cooked lamb. I was even able to have bread, in the form of a large, crisp wafer made of chickpea flour.

The Bread Bar isn’t the only place to get a deal: Tabla’s dining room is offering a prix fixe lunch menu year-round, not just during Restaurant Week. For $25, you can enjoy an opulent, elegant meal — and the staff will make any modifications necessary to make it gluten-free. It’s a splurge, but it’s worth it.

The Andes Meet the Alps in Arequipa

Of all of the cities I’ve traveled to, Arequipa has got to be the most underrated. Peru’s second-largest city is known as La Ciudad Blanca — the white city — because so many of its monumental buildings and churches are carved out of sillar, a ghostly white volcanic rock. (Arequipa lies at the foot of El Misti, a volcano that was described to me as “currently inactive.”) The city is famous for two attractions: Juanita, the Inca maiden who has become the world’s most famous human sacrifice, and the Monasterio Santa Catalina, a historic city within the city. Otherwise, Arequipa is generally regarded as the starting point for excursions to the Colca Canyon or the Cotahuasi Canyon.

That’s too bad, because Arequipa is a wonder that deserves to be explored. Its obvious treasures are plentiful, but the city also has a wealth of hidden gems, like the courtyard behind the Jesuit church, which is easy to miss (given that the church itself is filled with art treasures and valuable artifacts). It’s also a city that deserves to be known for its fine food. On my last night there, I dined at Zig Zag. Finding an Alpine restaurant in Peru seemed a little incongruous, but its mission — blending the culinary techniques of the Alps and the Andes with ingredients from all over Peru — works very well.

Zig Zag gets a mention in several guidebooks for its antique iron staircase, which was designed by Gustave Alexandre Eiffel (yes, as in that famous Parisian tower), but it also deserves notice for its cooking. At heart, it is startlingly simple: meats such as ostrich, alpaca, and beef, are served atop a sizzling hot stone, which cooks the meat to medium-rareness but leaves it tender and juicy. The quinoa-and-vegetable soup I had was also terrific, even if I did have to argue with the serving staff to get it (they took my celiac disease card so seriously that they decided I couldn’t have any grains at all, until I explained otherwise in my rusty Spanish). It made for a memorable meal in an elegant city full of surprises.

Roundup: Celiac Disease in the News

Have you noticed an uptick in the number of news items about celiac disease this week? May is Celiac Awareness Month, so organizations such as the Gluten Intolerance Group and the National Foundation for Celiac Awareness are promoting their message in the media. But I’m also chalking up the sudden flurry of stories to the celebrity effect: Elisabeth Hasselbeck, one of the hosts of ABC’s “The View,” has just published a book about celiac disease, which she was diagnosed with in 2002. The G-Free Diet: A Gluten-Free Survival Guide is filled with advice about living with the disorder. There’s not much that’s new here for celiacs already familiar with the gluten-free diet and with potential non-food pitfalls (such as lipsticks that contain gluten), but this is a good resource for the newly diagnosed celiac/gluten-intolerant person who is still coming to terms with the diagnosis.

Also, the book’s introduction is by Dr. Peter Green (author of Celiac Disease: A Hidden Epidemic), and it’s terrific. In it, he addresses the issue of gluten-sensitive people who don’t test positive for celiac disease, but whose bodies are sickened by gluten nonetheless. I’ve met Dr. Green in person, and he speaks convincingly about the fact that many people are negatively affected by gluten, not just the 1 in 133 who have celiac disease. Food for thought — and an issue everyone should read about.

The Gluten Intolerance Group of North America is celebrating Celiac Awareness Month in a special way: its Chef to Plate International Awareness Campaign has restaurants in 30 states offering gluten-free menu options. Some of the participating eateries are chains, including Cheeseburger in Paradise, Garlic Jim’s Famous Gourmet Pizza, Outback Steakhouse, and P.F. Chang’s. In some states, such as Illinois, Indiana, and Kansas, the only restaurants listed are chains (GIG’s list isn’t meant to be a comprehensive listing of celiac-friendly restaurants, just ones that are participating in this particular program). In New York, most of the participants — including Bistango, Nizza, Lilli & Loo, GustOrganics, Friedmans Lunch, Sambuca, and Opus — are independent operations. One of the most impressive lists of Chef to Plate participants is for Victoria, the capital city of British Columbia. I haven’t visited lately, but remember The Noodle Box and the Canoe Brewpub from a while back.

One more thing: a new resource called Gluten-Free Maps caught my eye on Twitter. It’s a smart site that blends Google Maps technology with user-generated suggestions. You can go there to check out what’s in your neighborhood, or you can map the location of a restaurant you’ve dined at successfully. If you’re searching for a gluten-free meal at home or while traveling, it’s another place to look.

Mail-Ordering Gluten-Free Groceries

Finding gluten-free food while traveling is an obvious challenge, but I’ve been hearing lately from readers who are having a tough time eating at home. One reader in Canada was appalled when she began to place an order at the online Gluten-Free Mall and discovered that it would cost $34 just to ship a one-pound parcel to her (unfortunately, the Mall doesn’t post its shipping charges on the site, so potential customers are sometimes in for a shock when they reach the checkout stage).

Living in New York means having lots of options, since grocery chains such as Trader Joe’s and Whole Foods carry plenty of gluten-free products, as do independent stores such as Natural Green Market. In other parts of North America, it can be tough to find gluten-free baked goods, pasta, and other essentials. For those who depend on mail-order to get their gluten-free groceries, here’s some advice:

  • Find manufacturers that ship products to customers directly: A few companies, such as Shabtai Gourmet, make this incredibly easy. Shabtai, which makes cakes, cookies, and other treats that are gluten free, lactose free, soy free, and casein free, ships its products anywhere in the continental US — for free. Kinnikinnick Foods ships its celiac-safe bagels, breads, donuts, and other products to Canada and the US; as you order, a tally of charges, including shipping, adds on the upper right corner of the page, so there are no upsets at checkout.
  • Remember to comparison shop: Gluten-free products tend to be expensive in North America, and there are no government subsidies for celiacs, as there are in countries such as Italy and Turkey. I’ve found Amazon to be a great place for deals on basics such as gluten-free pasta. Amazon is a bit like Costco, in that you have to buy in bulk, so instead of purchasing one package of Bob’s Red Mill Gluten-Free Homemade Wonderful Bread Mix, you need to buy four; in the case of Tinkyada Brown Rice Spirals with Rice Bran, you’d need to purchase a pack of 12. However, when you compare Amazon’s prices to certain sites that market themselves to gluten-free consumers, Amazon’s are great deals. Also, “Gluten-Free” is a major category in Amazon’s grocery department, so products are easy to find — and shipping is free on orders of $25 or more.
  • Read product reviews: It can be tempting to order treats that you’ve been missing, but we know that not all gluten-free products are equally good. In fact, some have the consistency and flavor of cardboard. Unfortunately, with products for delivery, you usually can’t send them back if you don’t like them. Before you order something new, be sure to check out sites such as Gluten Free Food Reviews; Amazon is also useful for its product reviews, even when you’re not ordering from the site.
  • Know that some restaurants do mail-order, too: New York’s Risotteria immediately comes to mind. Have you tried the Fudgie yet? You really should. My favorite local bakery, Babycakes, delivers, too. (By the way, Babycakes has its first-ever cookbook coming out; click on “Recommended Reading” to see it.)
  • Check out the great lists of gluten-free retailers that have already been compiled: Gluten-Free in SD has a great one, and it’s not just for people who live in San Diego. The Celiac Handbook has links to an exhaustive list of companies that ship gluten-free products. A listing isn’t an endorsement, but it’s still a great place to start.
  • Shop locally when possible: Some American companies won’t ship outside of the continental US. However, Canadians have the option of shopping from Toronto’s Specialty Food Shop, which I’ve written about before. The SFS will even ship frozen foods. In Hawaii, Sweet Marie’s (which reader Liisa wrote about here), delivers locally and internationally.
